Church Folks Love to Eat: Brown-Bag Caramel Popcorn

Brown-Bag Caramel Popcorn. The real beauty of making it by this method is that once you’re done shaking and coating the popcorn in that delectable sweet-salty goo, you toss the bag away. No cookie sheets to wash. Easy-peasy!

Since hubby Al has joined Weight Watchers, I’ve been trying to weed out those diet-buster recipes. The ones laden with sugar and fat. Having no real redeeming value. This is one of those. Back in the day, we used to munch on it during movie nights, or packed containers of it for car trips.

However, the Weight Watcher mantra says you can eat whatever you want, but you MUST account for it/track it. SO perhaps I don’t need to shred my recipe after all. . . for those of you not wanting to overindulge, the Weight Watchers points have been figured for you.

Be forewarned: If you can limit yourself to single servings, it won’t blow your diet out of the water. However, that’s the issue. Once you get started, you’ll want to scarf down the whole batch!

Brown-Bag Caramel Popcorn

Nutrition per serving (16 servings): Calories: 173/Total Fat 8.7 g/Cholesterol 0 mg

Weight Watchers Power Points per serving: 4


  • (**Microwave times are approximate. Mine cooks on the higher end of the spectrum, 1150 W)
  • 4 quarts popped popcorn
  • 1 cup brown sugar
  • ½ cup margarine
  • ¼ cup light corn syrup
  • ½ tsp. salt
  • 1 tsp. vanilla extract
  • ½ tsp. baking soda


  1. Put popped popcorn into a large brown bag. Set aside.
  2. Spread a layer of waxed paper on the countertop.
  3. In a 2-qt. casserole dish or heat-proof Pyrex cup, place in brown sugar, margarine, corn syrup, salt, and vanilla. Heat for 3 minutes on HIGH in microwave, take out, and stir. Return to microwave, cook for 1 more minute on HIGH. Remove from microwave, stir in baking soda.
  4. Pour syrup over the popcorn in the bag. Roll down top of bag once or twice to close bag and shake well to coat the corn. Place bag in microwave, cook for 1 minute on HIGH. Remove and shake. Cook 1 more minute on HIGH, shake. Dump popcorn onto waxed paper and cool until glaze is set. Store in airtight container.
